White Chili - a great change of pace ========================== 2 Cans White Kidney Beans (yes white) or 1 lb Navy or Great Northern Beans -- if using dried beans - don't forget to soak them overnight and rinse -- 3 cloves garlic 1 large onion - chopped 1/8 tsp white pepper 1 tsp cumin (or more) 1/2 tsp oregano 1/2 tsp marjoram 2 grilled and chopped chicken breasts 4 oz can chopped green chilis 1/8 tsp crushed red pepper chopped pickled jalapenos - to taste (I use at least 2 TBS) 1 tbs fresh chopped cilantro 8 cups Chicken broth salt to taste - doesn't need much -- Simmer onion, garlic, seasonings and beans in broth - 1 hr. -- Add green chilis, jalapenos, and chicken and simmer another hour. -- Thicken with corn starch (premixed with cold water of course) if needed.
