After several years of sampling buffalo wings from around the country and after many painstaking hours of experimentation in the kitchen and on the grill it is with great pride that I announce that I have perfected the buffalo wing recipe. Others may attempt to copy it, but few take the care and attention to detail required to make perfect wings every time.

Ingredients:

Durkee's Hot Sauce - 2 cups
4 TBS low-salt margarin (Fleishmans)
1/4 tsp garlic salt
1/2 tsp chili powder
1 TBS dried jalapeno pepper
1 tsp dried habanero pepper
four or more pounds of chicken wings - fresh and cut at the joints (discard tips)

Preparations:

put all ingredients (except wings) into a sauce pan and heat till boiling
reduce heat slightly and let sauce sit at a rapid simmer until the mixture thickens a bit (stir occasionally)
trim accessible pieces of fat from the wings and boil for a few minutes if you would like to eliminate more of the fat.
grill (yes grill - not broil or fry) wings until well done - go for the crispy but not yet black look.
dunk the wings directly from the grill into the sauce and remove to a separate dish for serving.
if prepared properly the sauce should adhere to the grilled wings - leaving a crispy texture.

Like any other pepper-head, I grow my own selection of hot peppers and dry them for use throughout the year. I haven't gone through the pickling process yet - primarily since my favorite pepper - Jalapeno - is readily available and cheap in its pickled form.
